ci: remove GitHub mirror job (manual push instead)

- Removed matrix build + artifact passing (was failing)
- Single job builds all platforms and creates release
- Added optional mirror-to-github job (needs GITHUB_MIRROR_TOKEN var)
- Better error handling for release creation
